In Korea, there are many permutations of fried chicken as there are purveyors. Chicken Charlie, this newest chicken place in eBloc 2, Cebu IT Park, though quite similar to its Korean counterparts also has a hallmark cooking technique that makes it different and gives the chicken an amazing texture: double frying.
The first in town to offer double-fried chicken, Chicken Charlie keeps working hard in order to deliver the real meaning of great fried chicken. So glad we do not have to travel and fly to Hongkong or to other cities in the country just to experience double fried goodness. Although I heard that Hong kong flights or flights to Korea now are affordable , I’m just happy that our side of the world already has this delightful treat.
It’s not just about that amazing crunch that you can tell with excellent, fresh-off-the-fryer chicken, but it’s about having you and friends at the shop huddled around for a memorable food experience.
“When I first tried it two years ago,” says JP Sy, Managing Partner in Cebu. “I knew it is going to be a hit. The chicken is not too overpowering. And there are hardly any breadcrumbs.”
JP is referring to their double-frying technique version as one of the simplest, as it doesn’t require long brining or dredging the chicken in flour and battering it. Instead, using easy-to-find ingredients, the recipe calls for mixing up a spice paste quickly in a food processor, then massaging it into the chicken. The spice-rubbed chicken is fried once until nearly cooked through, then fried again to ensure crispy skin every time. Each chicken is definitely a triumph on its own.
