Shangri-La Mactan’s Dimsum Specials by Guest Chef Duan Lu Ming

Tea of Spring, Shangri-La Mactan Resort and Spa Cebu’s Cantonese Restaurant will be serving special dim sum creations by guest Chinese Chef Duan Lu Ming of China World Summit Wing, Beijing from July 19 to August 14, 2011. A special menu of 16 dim sum specials will be offered daily for lunch and dinner minus the entertaining demo Chef Duan showed to us when tested out their limited edition menu.

Chef Duan Lu Ming has led the dim sum kitchen team of China World Hotel Summit Wing, Beijing since 2009. On his first assignment as visiting guest chef, Chef Duan hopes to delight the taste buds of the people of Cebu while enhancing the dim sum making skills of the Tea of Spring culinary team. He is also talented in sculpting Chinese characters out of dough. We were lucky enough to see that for ourselves.

Chef Duan offers one of a kind dim sum creations, giving modern interpretations to classic dim sum.  He gives simple crispy prawn dumplings a taste makeover with the flavor of truffle oil.  Traditional squid dumplings are made more visually attractive with the use of ink squid, a culinary technique borrowed from the Western tradition of black pasta.

Siew Mai, traditionally made with pork and shrimp, is given a healthier take by using chicken in lieu of pork, making the dish more palatable to a larger clientele.  The special menu also includes time honored dim sum classics such as Shanghai Xiao Long Pao, freshly made Steamed Shrimp Dumplings, Vegetable Dumplings and Hong Kong style Pan-fried Turnip Cake. Our favorite were the dumplings and the siew mais. Ah, lovely!
