There was a lot of “Aha!” moments when a group of writers and I had lunch at SIAM one afternoon. Do you know Thai cuisine has a more classy appeal to it compared to other food out there? SIAM has been around for years now and I’ve truly enjoyed every visit all the time. Admittance requires a whole lot of good energy and vibes and that’s also what Siam Thai Cuisine offers.
The concept of Ayala Terraces was that of the most modern food destination. With modern or contemporary theme in mind, Krua Thai did not seem to fit in because of its classical and traditional Thai feel. So then Siam was born as the contemporary version of the then already popular Krua Thai. That afternoon, we were to sample their newest and latest menu.

One pride of Siam is their Thai Master Chef from, of course, Thailand: Master Chef Suphap Tubhongsa. Though several establishments boast of Chefs from out of the country, Siam Thai Cuisine is proud of their Master Chef from Thailand. Not only is he a Thai Master Chef but his family has been passing generation to generation, their culinary practice.
Authentic Thai food comes with Mr. Anthony Ballreich, the genius behind Siam, going to Thailand every quarter, researching new dishes, recipes, and the best quality of imported Thai ingredients to be shipped back here to Cebu for our delight. Even ingredients as simple as the ginger used here are shipped from Thailand.

By the time the 3rd course arrived, I began to make flat out discoveries – that, yes, Siam Thai will always, always be consistent with their dishes and that it will always be one of those top 10 lists that make it in this blog.
Another discovery – that the owner Mr. Anthony Ballreich has a favourite among the plethora of tasty dishes they have and we can almost contain our excitement as the last dish was served. Ah, the Seafood curry in coconut shell. MARVELOUS. How do Thais say IFUKCINGLOVETHISDISHIWANNAHAVEITINJECTEDINMYVEINSALLTHETIME?
If you say I might have a primitive relationship with food (hey, if it tastes better, then it tastes better), and I have felt overmatched by the intensity of the garnishes and the entire hoopla of arranging and styling it but SIAM entirely brings new flavors to the dinner table all the time that attracts a nation of food enthusiasts – Thai food enthusiasts.
